Meat and \u2018bitterballen\u2019 are still very popular items in the lunches and snacks ordered by staff. If the university has its way, that will soon change. It wants staff to order lunches without beef, pork or milk if the catering is paid for by EUR. Chicken and turkey will be allowed, for now.<\/p>\n

\u201cStarting next quarter, staff will only be able to order vegetarian catering\u201d, the university wrote in a press release on 6 February in which it acknowledged the climate emergency. Students and staff will also be \u2018encouraged\u2019 to opt for vegetarian food on campus more often, according to the announcement. So are croquette sandwiches now taboo? Will staff still be able to order meat via the catering service as of 1 April?<\/strong><\/p>\n

Yes, says Michel Flaton, general manager at campus caterer Vitam. \u201cVitam\u2019s standard catering on campus has been vegetarian for years, but meat can be requested.\u201d According to Flaton, meat is still popular in lunches and snacks, especially croquette sandwiches. \u201cThe demand is still there, so we supply it. These agreements are in our contract with the university.\u201d<\/p>\n

Nevertheless, the university is switching to vegetarian catering on all occasions via an intermediate step. Managers are responsible for ensuring that happens. This has been decided by the deans and the Executive Board, explains Mariecke van der Glas, Sustainability programme manager.<\/p>\n\n\t
